Easy cappuccino parfaits
instant coffee powder
low-fat ricotta cheese
99% fat-free plain Greek yoghurt
icing sugar mixture
Biscuits, chocolate chip, reduced-fat
60 g, broken into small pieces
- Combine coffee and 3 tsp boiling water in a small bowl until coffee has dissolved. Cool.
- Place ricotta, yoghurt, icing sugar and coffee mixture in a food processor. Process until smooth.
- Divide half the ricotta mixture among four 2/3 cup (160ml) capacity serving glasses. Sprinkle two-thirds of biscuit pieces evenly over ricotta mixture. Top with remaining ricotta mixture and remaining biscuit pieces. Cover and refrigerate for 3 hours or until set. Serve.
