This is one of the easiest, most luxurious desserts you can make and all it requires is a little ice cream and a splash of espresso. We top ours with grated chocolate.
Instant coffee powder
2 tsp, espresso
Light ice cream
2 scoop(s), small, vanilla, (2 x 50g scoops)
5 g, finely grated (1 tsp)
- Combine coffee powder and ¼ cup (60ml) boiling water in a small heatproof jug. Stir until coffee is dissolved.
- Place ice cream into 2 heatproof glasses. Pour 1½ tablespoons of hot coffee over each serve and sprinkle evenly with chocolate. Serve straightaway.
INGREDIENT TIP: If you have an espresso coffee machine, pour a freshly brewed coffee shot over each serving instead of using instant coffee powder and water.
