Dark chocolate bliss balls
chickpeas, canned, rinsed, drained
¾ cup(s), (130g)
light cream cheese
light peanut butter
¼ cup(s), (80g), smooth variety
⅓ cup(s), (75g), dark variety
vanilla bean extract, alcohol free
bicarbonate of soda
dark chocolate chips
- Place chickpeas, peanut butter, dark brown sugar, cream cheese, vanilla extract, bicarbonate of soda and a pinch salt in a food processor. Process until smooth. Add flour and chocolate chips. Pulse until just combined. Refrigerate for 1 hour or until mixture is chilled.
- Sift sugar and cocoa into a baking dish. Reserve 2 tablespoons of cocoa mixture. Using a melon baller, scoop dough mixture into 36 small balls and place as you go in baking dish. Gently roll balls to coat. Arrange coated bites on a serving platter and keep chilled until ready to serve. Dust with remaining cocoa mixture just before serving.
