Ingredients

chickpeas, canned, rinsed, drained

¾ cup(s), (130g)

light cream cheese

1 tsp

light peanut butter

¼ cup(s), (80g), smooth variety

brown sugar

cup(s), (75g), dark variety

vanilla bean extract, alcohol free

½ tsp

bicarbonate of soda

tsp

plain flour

2 tbs

dark chocolate chips

2 tbs

icing sugar

2 tbs

cocoa powder

2 tbs

Instructions

  1. Place chickpeas, peanut butter, dark brown sugar, cream cheese, vanilla extract, bicarbonate of soda and a pinch salt in a food processor. Process until smooth. Add flour and chocolate chips. Pulse until just combined. Refrigerate for 1 hour or until mixture is chilled.
  2. Sift sugar and cocoa into a baking dish. Reserve 2 tablespoons of cocoa mixture. Using a melon baller, scoop dough mixture into 36 small balls and place as you go in baking dish. Gently roll balls to coat. Arrange coated bites on a serving platter and keep chilled until ready to serve. Dust with remaining cocoa mixture just before serving.
