Ingredients

broccoli

2 piece(s), stalks, about 10cm long, 4cm thick

carrot(s)

2 medium, peeled

apple

1 large, red

lemon juice

2 tbs

green shallot(s)

2 individual, thinly sliced

fresh mint

¼ cup(s), leaves

orange juice

¼ cup(s), (60ml)

olive oil

poppy seeds

Instructions

  1. Trim any very knobbly bits from broccoli stalks. Spiralize broccoli, carrot and apple. Toss apple with lemon juice in a large bowl to prevent discolouration. Break very long vegetable spirals into shorter pieces.
  2. Combine all vegetables, green shallots and mint in a large bowl. Whisk orange juice, oil and poppy seeds in a small bowl. Season with salt and pepper. Drizzle over slaw and use your hands to toss to combine.
