Crunchy waldorf salad with yoghurt dressing

cos lettuce3 baby, leaves torn
Apple, red, unpeeled, fresh1 large, cored, thinly sliced
fresh flat-leaf parsley½ cup(s), leaves
dried cranberries2 tbs
pecans⅓ cup(s), (40g), chopped
99% fat-free plain yoghurt¼ tub(s), (60g)
lemon juice3 tsp
dijon mustard1 tsp
- Combine celery, cos, apple, parsley, cranberries and pecan nuts in a large bowl.
- Combine yoghurt, lemon juice and mustard in a jar.
- Drizzle salad with dressing and gently toss to combine.
