Crunchy waldorf salad with yoghurt dressing

Ingredients
  • Celery
    4 individual, cut into matchsticks
  • cos lettuce
    3 baby, leaves torn
  • Apple, red, unpeeled, fresh
    1 large, cored, thinly sliced
  • fresh flat-leaf parsley
    ½ cup(s), leaves
  • dried cranberries
    2 tbs
  • pecans
    ⅓ cup(s), (40g), chopped
  • 99% fat-free plain yoghurt
    ¼ tub(s), (60g)
  • lemon juice
    3 tsp
  • dijon mustard
    1 tsp
Instructions
  1. Combine celery, cos, apple, parsley, cranberries and pecan nuts in a large bowl.
  2. Combine yoghurt, lemon juice and mustard in a jar.
  3. Drizzle salad with dressing and gently toss to combine.
Notes
TIPS: • Transport salad and dressing separately. Add dressing just before serving to keep salad crisp. • ADD IT Grilled lean chicken breast.
