Croque madame originated in France and has a ham and cheese bread base that is grilled. A fried egg is the finishing touch to this favourite breakfast loved by all.

Ingredients

Wholemeal bread

160 g, sourdough

Dijon mustard

1 tbs

97% fat-free deli sliced ham

80 g

Extra light cheddar cheese

60 g, grated

Egg(s)

4 medium

Cherry tomatoes

125 g, halved

Rocket

40 g

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat grill on high. Cook bread in toaster and spread with mustard. Place on a baking tray. Top with ham and sprinkle with cheese. Cook under grill for 2 minutes or until cheese melts.
  2. Meanwhile, lightly spray a large non-stick frying pan with oil and heat on medium-high. Crack eggs into pan and cook, covered, for 2 minutes or until whites have set but yolks are soft or to your liking.
  3. Place toast onto plates and top with eggs. Add rocket and tomato and season.
