Creamy ham and vegetable pasta
97% fat-free deli sliced ham
200 g, chopped
300 g, penne
510 g, (buy 600g), peeled, cut into 1.5cm cubes
extra light cooking cream
½ cup(s), (125ml)
baby spinach leaves
grated parmesan cheese
- Steam or microwave the pumpkin for 5 minutes or until tender.
- Meanwhile, cook the pasta in a large saucepan of boiling salted water, following packet directions or until al dente. Drain the pasta and return to the pan. Add the cream and spinach and stir over low heat until combined and spinach has just wilted. Gently fold in the pumpkin and ham and season with salt and pepper.
- Sprinkle parmesan over the pasta.
