Cranberry gin and tonic
75 g, or frozen
1 tsp, 3 sprigs, plus extra to serve
diet tonic water
200 ml, sugar-free variety
- Using a vegetable peeler remove 4 strips of peel from the orange, taking care not to peel white pith. If any white pith is visible carefully remove with a small paring knife.
- Place cranberries, sugar and orange strips in a small non-stick saucepan and heat over low heat. Cover with ½ cup (125ml) water and bring to a simmer. Cook for 5 minutes, add thyme and bring to the boil. Remove from heat, cover and set aside for 20 minutes to infuse. Strain through a sieve and discard solids. Cool syrup.
- Divide syrup, gin and tonic among 4 chilled glasses. Add ice cubes, stir and serve garnished with extra thyme.
