Couscous soup with prawns

Stirring in couscous to your soup during the last few minutes of cooking adds delicious texture that absorbs the soup flavour.


Ingredients
Olive oil
1 tbs
Carrot(s)
2 medium, cut into 1cm pieces
Celery
1 stick(s), sliced
Garlic
1 clove(s), finely chopped
Harissa
¼ tsp
Canned diced tomatoes
400 g, diced
Salt reduced chicken stock
5 cup(s), (1.25L)
Green string beans
250 g
Raw peeled prawns
24 small, peeled, tail on
Dry couscous
½ cup(s), (100g)
Fresh coriander
2 tbs, chopped
Lemon(s)
1 medium, cut into wedges to serve
Instructions

Heat oil in a large saucepan over medium-high heat. Cook carrots, celery and garlic, stirring often, for 3 minutes. Add harissa, stir for 1 minute. Add tomatoes, stock and beans, cut into thirds. Reduce heat to medium. Simmer for 5 minutes.

Add prawns and couscous. Simmer for 3 minutes. Season with salt and pepper.

Divide soup among bowls. Sprinkle with coriander. Serve with lemon wedges.
