Welcome your family home with the irresistible aroma of homemade soup simmering on the stove.

Ingredients

Olive oil

1 tbs

Leek

1 whole, cut into 1m pieces

Carrot(s)

1 large, cut into 1cm pieces

Vegetable stock

4 cup(s), (1L)

Pearl barley

cup(s), rinsed, drained

Swede

1 medium, cut into 1cm pieces

Orange sweet potato (kumara)

1 small, cut into 1cm pieces

Green string beans

125 g, cut into 1cm pieces

Broccoli

1 cup(s)

Instructions

  1. Heat oil in a large saucepan over medium heat. Add leek and carrot and cook, stirring, for 5 minutes or until leek has softened.
  2. Add stock and barley and bring to the boil. Reduce heat and simmer, covered, for 15 minutes. Add swede and sweet potato and simmer, covered, for 15 minutes or until vegetables and barley are tender.
  3. Add beans and broccoli and simmer, uncovered, for 3–4 minutes or until just tender (add a little water if soup seems too thick). Season with salt and freshly ground black pepper. Serve.

Notes

SERVING SUGGESTION: Hummus toast. Toast 4 x 35g slices rye sourdough bread and spread with ½ cup (130g) hummus.
