Coronation chicken salad

The fresher the better is the key for this no-cook meal. Crunchy vegies are a must!
cooked skinless chicken breast500 g, sliced
red capsicum1 medium, thinly sliced
Lebanese cucumber1 medium, halved lengthways, diagonally sliced
mango1 medium, thinly sliced
Snowpea sprouts100 g, trimmed
avocado½ large, (80g) chopped
light whole egg mayonnaise⅓ cup(s), (100g)
Chutney, mango2 tbs
curry powder¼ tsp
- Arrange the chicken, capsicum, cucumber, mango and snow pea sprouts on a serving platter. Top with the avocado. Season with salt.
- Combine the mayonnaise, chutney, curry powder and 2 tablespoons of water in a bowl. Drizzle over the salad and season with pepper.
