Coronation chicken salad

The fresher the better is the key for this no-cook meal. Crunchy vegies are a must!
Ingredients
  • cooked skinless chicken breast
    500 g, sliced
  • red capsicum
    1 medium, thinly sliced
  • Lebanese cucumber
    1 medium, halved lengthways, diagonally sliced
  • mango
    1 medium, thinly sliced
  • Snowpea sprouts
    100 g, trimmed
  • avocado
    ½ large, (80g) chopped
  • light whole egg mayonnaise
    ⅓ cup(s), (100g)
  • Chutney, mango
    2 tbs
  • curry powder
    ¼ tsp
Instructions
  1. Arrange the chicken, capsicum, cucumber, mango and snow pea sprouts on a serving platter. Top with the avocado. Season with salt.
  2. Combine the mayonnaise, chutney, curry powder and 2 tablespoons of water in a bowl. Drizzle over the salad and season with pepper.
