Coriander, cashew and sesame pesto

Add a dollop of tasty homemade pesto to a plate of pasta or as a topping for meat or fish. It's an instant dinner winner!

Ingredients

Fresh coriander

2 cup(s)

Fresh ginger

1 tbs, grated

Fresh red chilli

1 whole, deseeded, chopped

Pecorino cheese

25 g, grated

Unsalted roasted cashew nuts

¼ cup(s), unsalted

Lime rind

1 tsp, finely grated

Sesame oil

1 tbs

Mirin seasoning

2 tbs

Instructions

  1. Place coriander leaves, fresh ginger, chilli, cheese, cashews and lime rind in a food processor. Process until roughly chopped.
  2. With the motor running, gradually add sesame oil and mirin. If pesto is too thick, add a little warm water. Season with salt and freshly ground black pepper.

Notes

TIP: Great with grilled prawns or salmon, or tossed through soba, udon or rice noodles.
