Ingredients

Instant coffee

1 tbs

Brown sugar

2 tsp

Smoked paprika

1 tsp

Garlic powder or flakes

½ tsp

Dried chilli flakes

¼ tsp

Beef rump steak, raw

480 g, (Buy 600g), fat trimmed

Orange sweet potato (kumara)

500 g, cut into wedges

Dried herbs

½ tsp, mixed

Oil spray

2 x 3 second spray(s)

Instructions

  1. Combine coffee, sugar, paprika, garlic and chilli in a small bowl. Rub mixture over beef. Season with salt and pepper.
  2. Preheat oven to 200°C. Line a baking tray with baking paper. Arrange sweet potato in a single layer on prepared tray and lightly spray with oil. Sprinkle with herbs and season with salt and pepper. Bake for 20 minutes or until golden and tender.
  3. Meanwhile, lightly spray a chargrill or barbecue with oil and preheat over medium-high heat. Cook beef for 2-3 minutes each side or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 5 minutes before thinly slicing and serving with sweet potato wedges. Drizzle with resting juices.

Notes

SERVING SUGGESTION: Salad of lettuce, tomato, cucumber and shaved fennel. TIP: Resting steak before slicing allows the juices to be reabsorbed into the meat, resulting in a more tender steak.
