If you're a fan of chocolate and coffee, then this recipe is perfect for you. Soaked in hot, strong coffee overnight, mixed dried fruit is combined with white self-raising flour and chopped milk chocolate with dried fruit and nuts to create a moist and flavourful cake that's perfect for any occasion. This recipe yields 20 servings and is perfect for sharing with family and friends. Don't forget to store any leftovers in an airtight container in a cool, dark, and dry place for up to a month.

Ingredients

Mixed dried fruit

1000 g

Coffe, long black

2 cup(s), (500ml), hot, strong

White self-raising flour

2 cup(s), (300g)

Chocolate block, milk with dried fruit and nut

150 g, chopped

Instructions

  1. Combine dried fruit and coffee in a large heatproof bowl, then cover and set aside to soak overnight.
  2. Preheat oven to 160°C or 140°C fan-forced. Line base and two long sides of an 18cm x 28cm lamington pan with baking paper. Add flour and chopped chocolate to fruit mixture, stirring well to combine. Spread mixture evenly into prepared pan. Bake for 40 minutes or until a skewer inserted into centre comes out clean. Cool coffee and chocolate fruit cake in pan completely before serving.
