Mixed dried fruit
Coffe, long black
2 cup(s), (500ml), hot, strong
White self-raising flour
2 cup(s), (300g)
Chocolate block, milk with dried fruit and nut
150 g, chopped
- Combine dried fruit and coffee in a large heatproof bowl, then cover and set aside to soak overnight.
- Preheat oven to 160°C or 140°C fan-forced. Line base and two long sides of an 18cm x 28cm lamington pan with baking paper. Add flour and chopped chocolate to fruit mixture, stirring well to combine. Spread mixture evenly into prepared pan. Bake for 40 minutes or until a skewer inserted into centre comes out clean. Cool coffee and chocolate fruit cake in pan completely before serving.
TIP: This cake can be stored in an airtight container in a cool, dark and dry place for up to a month.
