These nutrient filled ice-blocks are the perfect summer refreshment filled with colourful fruit and coconut water.

Ingredients

Fresh strawberries

30 g, finely chopped

Fresh raspberries

30 g, finely chopped

Fresh blueberries

30 g, finely chopped

Kiwifruit

30 g, finely chopped

Mango

30 g, finely chopped

Pure coconut water

cup(s), (80ml)

Instructions

  1. Divide fruit between 4 x 60ml capacity popsicle moulds. Evenly pour in coconut water, leaving a 5mm gap at the top. Freeze for 6 hours, or overnight, until frozen solid. Carefully release popsicles from moulds to serve.

Notes

TIPS: We used a mix of strawberries, kiwifruit, mango, raspberries and blueberries but you can use any fruit you like. Iceblock moulds can vary in size. Just ensure that you add enough fruit so the stick is covered when inserted, while leaving a 5mm gap at the top to allow the liquid to expand.
