With the goodness of avocado, chicken, egg and vegies, this salad will definitely fill you up at lunch time and it’s also fantastic as a quick dinner to enjoy mid-week.

Ingredients

olive oil

2 tsp

Hans 98% Fat Free Short Cut Bacon

125 g, chopped

cos lettuce

4 cup(s), (2 baby cos)

cherry tomato

200 g, or grape tomatoes

avocado

1 medium

Chicken, lean breast, skinless, stewed or braised

2 medium, (2 x 150g)

boiled egg(s)

4 medium, soft boiled, halved

Ranch dressing, light

80 ml, (2/3 cup)

Instructions

  1. Heat oil in a small non-stick frying pan over medium-high heat. Cook bacon, stirring, for 5 minutes or until browned.
  2. Meanwhile, chop lettuce, tomatoes, avocado and chicken. Arrange in serving bowls with bacon. Top with egg and drizzle with dressing. Serve.

Notes

SERVING SUGGESTION: Rye bread. TIP: Ranch dressing is a mix of mayonnaise, buttermilk, onion, garlic, herbs such as chives, parsley and dill, and spices including paprika, mustard and black pepper.
