Tabouli is a Lebanese salad made with fresh herbs, tomatoes and bulgur. It can be eenjoyed at a delicious summer dinner party or as a simple salad in a weeknight dinner.

Ingredients

burghul

¼ cup(s), (45g)

tomato(es)

3 medium, finely chopped

lemon juice

¼ cup(s), (60ml)

fresh flat-leaf parsley

2½ cup(s), coarsely chopped

fresh mint

½ cup(s), coarsely chopped

red onion

½ medium, finely chopped

garlic

1 clove(s), crushed

olive oil

2 tbs

Instructions

  1. Place burghul in a medium shallow bowl. Top with tomatoes and lemon juice, cover and place in the fridge for 1 hour.
  2. Transfer burghul mixture to a large bowl. Add parsley, mint, onion, garlic and olive oil.
  3. Season with salt and pepper. Toss to combine. Serve.
