Great as a side to accompany a summer barbeque or served alone for a fabulous lunch, this rice salad is just simply bursting with flavour!

Ingredients

white boiled rice

2 cup(s), (340g)

pineapple

225 g, diced

red capsicum

1 small, finely chopped

carrot(s)

1 small, coarsley grated

green shallot(s)

2 individual, thinly sliced

fresh flat-leaf parsley

½ cup(s), coarsley chopped

lemon juice

¼ cup(s), (60ml)

sunflower oil

1½ tbs

curry powder

1 tsp, (mild)

Instructions

  1. Combine rice, pineapple, capsicum, carrot, shallots and parsley in a large bowl.
  2. Whisk lemon juice, oil and curry powder in a small bowl. Season with salt and pepper.
  3. Add dressing to rice mixture and toss to combine. Serve
