Citrus mint julep
freshly squeezed orange juice

- Using a vegetable peeler, peel wide strips of rind from the lime, lemon and orange. Place the citrus rind, sugar and 2/3 cup (160ml) of water in a small saucepan. Cook, stirring, over medium heat until the sugar dissolves. Simmer until the syrup is reduced by half.
- Place the mint leaves, orange juice and lemon juice in a large jug. Stir in the sugar syrup and citrus strips and set aside for 30 minutes to develop the flavour.
- Place ice cubes in six tall glasses. Pour in the citrus mixture and top up with mineral water.
