This drink has maximum zing as you allow the flavours of the citrusy strips to infuse into the juice.

Caster sugar

Fresh mint

½ cup(s)

Freshly squeezed orange juice

1 cup(s), 250ml

Lemon juice

2 tbs

Natural mineral water

1 glass(es), To serve

Using a vegetable peeler, peel wide strips of rind from the lime, lemon and orange. Place the citrus rind, sugar and 2/3 cup (160ml) of water in a small saucepan. Cook, stirring, over medium heat until the sugar dissolves. Simmer until the syrup is reduced by half.

Place the mint leaves, orange juice and lemon juice in a large jug. Stir in the sugar syrup and citrus strips and set aside for 30 minutes to develop the flavour.

Place ice cubes in six tall glasses. Pour in the citrus mixture and top up with mineral water.
