Citrus fruit salad with ginger lime syrup

This refreshing dessert celebrates juicy citrus fruits in all its glory with ginger-infused syrup and crunchy pistachios.

Ingredients

lime juice

1½ tbs

caster sugar

2 tbs

fresh ginger

1 tbs, grated

orange

3 medium, peeled raw, thinly sliced

Grapefruit

1 whole, (yellow), segmented

Grapefruit

2 whole, (ruby), segmented

lime

1 medium, zest

pistachios

22 g, (2 tbs) chopped

Instructions

  1. Place the lime juice, sugar, ginger and ¼ cup (60ml) water in a small saucepan. Bring to the boil. reduce heat and simmer for 5 minutes. Set aside to cool.
  2. Meanwhile, arrange the orange and grapefruit in serving bowls. strain the syrup over the citrus fruit and place in the fridge for 1-2 hours for the flavours to develop. serve sprinkled with lime zest and pistachios.

SERVING SUGGESTION: A dollop of low-fat vanilla yoghurt.
