Sweet, soft, versatile – prunes are a perfect addition to this delicious dessert.

Ingredients

White self-raising flour

1 cup(s), (150g)

Prunes

1 cup(s), (170g), seeded

Bicarbonate of soda

1 tsp

Reduced fat oil spread

50 g

Caster sugar

cup(s), (150g)

Cocoa powder

¼ cup(s), (25g)

Egg(s)

2 medium

Flaked almonds

cup(s), (25g)

Icing sugar

1 tsp, to dust

Instructions

  1. Preheat oven to 160°C. Lightly spray a 20cm round springform tin with oil and line base and side with baking paper.
  2. Combine prunes, bicarbonate of soda and 1¼ cups (310ml) boiling water in bowl of food processor. Stand, covered, for 5 minutes to soak. Add spread and sugar and process until combined. Add the flour, cocoa and eggs and process until combined.
  3. Spoon mixture into prepared tin and smooth the surface. Sprinkle evenly with almonds. Bake for 50-55 minutes or until cooked when tested with a skewer. Set aside to cool in tin for 5 minutes before turning onto a wire rack to cool completely. Dust with icing sugar.
