This quick and easy mug muffin is the perfect solution when you are short on time and looking fora sweet treat.


Reduced fat oil spread

2 tsp

Plain flour

5 tsp

Baking powder

¼ tsp

Cocoa powder

2 tsp

Caster sugar

2 tsp

Skim milk

1½ tbs

Vanilla bean extract, alcohol free

¼ tsp

Orange rind

¼ tsp, finely grated, plus extra to serve

Dark chocolate

5 g, chopped

99% fat-free, plain Greek yoghurt, unsweetened

1 tbs, to serve

Oil spray

1 x 3 second spray(s)


  1. Melt oil spread and set aside to cool. Sift flour, baking powder, cocoa and sugar into a small bowl. Add milk, vanilla, orange rind and the cooled spread. Stir until smooth and combined. Lightly spray a 200ml capacity microwave-safe mug with oil. Spoon mixture into prepared mug. Scatter over chocolate. Microwave on High (100%) for 50 seconds or until risen and cooked in centre. Stand for 5 minutes. Serve topped with yoghurt and strips of orange rind.
