Choc-toasted muesli

Make your own toasted muesli without the added sugar of store brought toasted muesli. Nuts, apricot and coconut all toasted in a cocoa and cinnamon apple mix makes for an irresistible snack.

Ingredients

Rolled oats, dry

2 cup(s), (180g)

Sunflower seeds

25 g

Pumpkin seeds (pepitas)

25 g

Sesame seeds

2 tbs

Cacao powder

2 tbs, raw cacao

Ground cinnamon

½ tsp

Apple juice no added sugar

½ cup(s), (125ml)

Pecans

⅓ cup(s), (40g) halved lengthways

Shredded or desiccated coconut

¼ cup(s), (20g) shredded

Dried apricots

4 whole, thinly sliced

Raisins

1½ tbs, cut in half

Preheat oven to 180°C. Combine oats, seed mix, sesame seeds, cacao powder and cinnamon in a large baking dish.

Add juice. Mix until the dry ingredients are well coated. Bake for 25 minutes, stirring once halfway through. Add pecans and coconut. Mix until well combined. Bake for a further 20 minutes, stirring once halfway through, until golden. Cool on tray.

Add apricot and raisins. Mix until well combined. Store in an airtight container.
