A brilliant no-bake dessert that feels really indulgent. You can make the nice cream ahead of time and assemble the bowls when you’re ready to serve.

Ingredients

Banana(s)

420 g, frozen, chunks

Cocoa powder

30 g

Natural peanut butter (100% nuts)

40 g, smooth

Peanuts, without skin, roasted, unsalted

20 g, roughly chopped

High-fibre brownie bar(s)

2 bar(s), crumbled, (2 x 24g bars)

Maple syrup

3 tsp

Instructions

  1. 1 Process banana and cocoa in a food processor or blender until smooth. Transfer to a reusable container and freeze for 2 hours, or until it reaches a scooping consistency.
  2. Meanwhile, mix peanut butter, maple syrup and 2 tablespoons boiling water in a small bowl until smooth. Set aside.
  3. Remove nice cream from freezer about 10 minutes before serving. To serve, divide nice cream among 6 serving cups or bowls, drizzle with peanut butter mixture and scatter over peanuts and brownie crumbs.
