Ingredients

Zucchini

1 medium, finely grated

Carrot(s)

1 medium, finely grated

Chicken breast mince

500 g

Fresh coriander

¼ cup(s), chopped

Fresh lemon rind

2 tsp, finely grated

Dried chilli flakes

1 tsp

Mushrooms

8 whole, large flat variety, stalks removed

Tomato(es)

2 medium, finely chopped

Lemon juice

2 tsp

Baby spinach

60 g

Fresh basil

2 tbs, leaves, to serve

Lemon(s)

1 medium, wedges, to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. Using your hands, squeeze excess moisture from zucchini and carrot. Combine zucchini, carrot, mince, coriander, rind and ½ teaspoon chilli in a large bowl. Season with salt and pepper. Shape mixture into four 2cm-thick patties.
  2. Lightly spray a chargrill or barbecue with oil and preheat over mediumhigh heat. Cook patties for 4 minutes each side or until golden and cooked through. Meanwhile, cook mushrooms for 3 minutes each side or until golden and tender.
  3. Combine tomato, juice and remaining chilli in a small bowl to make a salsa. Season with salt and pepper.
  4. Top mushroom ‘bun’ bottoms with spinach, patties, salsa and basil. Cover with mushroom ‘bun’ tops. Serve with lemon wedges.
