Chickpea open sandwich
99% fat-free, plain or natural yoghurt, unsweetened
Canned chickpeas, rinsed and drained
2 400g can, (2 x 400g cans)
1 tbs, finely chopped, plus extra to serve
White sourdough bread
4 slice(s), (4 x 40g slices), toasted
40 g, baby variety
1 medium, wedges, to serve
- Combine chutney, yoghurt, curry powder and juice in a large bowl. Add chickpeas, chopped coriander and sultanas. Season with salt and pepper and stir to combine.
- Top each slice of bread with rocket and chickpea mixture. Sprinkle with extra coriander and serve with lemon wedges.
