Chicken, tomato and basil parcels

Grilling the ingredients in a parcel seals in all their delicious flavours and juices. Moist and tasty grilled chicken and tomatoes can be prepared in just 40 minutes with easy clean-up. Serve this recipe on its own or over rice or mixed greens. This recipe is equally delicious using fish fillets instead of chicken. Be careful when opening the parcel so as not to get burned by the steam. Garnish this dish with fresh basil.
Skinless chicken breast
500 g, (4 x125g)
1 clove(s), crushed

- Preheat oven to 200°C.
- Lay 4 x 30cm square pieces of baking paper on kitchen bench and place a chicken breast in the centre of each one. Rub garlic over chicken, season with salt and pepper and drizzle with oil. Scatter over tomatoes and basil. Bring sides of paper over chicken and fold over twice to securely enclose filling, then tuck under ends to form parcels.
- Place parcels on a large baking tray. Bake for 20-25 minutes or until chicken is cooked through. Open parcels, being careful of hot steam. Transfer chicken to a cutting board and cut into 1-cm thick slices. Place each chicken portion on a serving plate. Serve topped with tomatoes, basil and cooking juices from parcels.
