Chicken, sweet potato and feta pizza

Roasted sweet potato and chicken makes a lovely layer before crumbling fetta and drizzling barbecue sauce for a pizza that could only be described as perfection


Reduced fat feta cheese

100 g, crumbled

Barbecue sauce

2 tbs, (smokey)

Tomato paste

2 tbs

Orange sweet potato (kumara)

300 g, cut into 2 cm pieces

Skinless chicken breast

240 g, fat trimmed, (buy 2x150g)


2 clove(s), unpeeled

Olive oil

1 tbs

Wholemeal lebanese bread

200 g, halved (2x100g)

Baby spinach

50 g


  1. Preheat oven to 180°C or 160°C fan-forced. Place chicken, sweet potato and garlic on a baking tray and drizzle with oil. Season with salt and freshly ground black pepper. Bake for 25–30 minutes or until chicken is cooked through and potato is golden. Slice chicken thinly.
  2. Place bread on 2 pizza or baking trays. Squeeze roasted garlic from skins into a small bowl. Add tomato paste and sauce and stir to combine. Spread sauce mixture over bread. Top with chicken, sweet potato and feta. Bake for 10–12 minutes or until bread is crisp and golden. Cut in half and serve topped with spinach.


SERVING SUGGESTION: Salad of mixed lettuce, chopped red capsicum, black olives and baby roma tomatoes, drizzled with balsamic vinegar.
