Chicken satay pizza

Try your hand at fusion food by topping Lebanese bread with a mix of Italian and Asian flavours.


Ingredients
Skinless chicken breast
500 g, thinly sliced
Soy sauce
1 tbs
Satay sauce
¼ cup(s), (60ml)
Lebanese bread
2 individual
Tomato paste
2 tbs
Red onion
1 small, thinly sliced
Red capsicum
1 small, thickly sliced
Baby spinach
50 g
Oil spray
1 x 3 second spray(s)

Preheat oven to 200°C or 180°C fan-forced. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook chicken for 3–4 minutes or until cooked through. Add soy and satay sauces and simmer, uncovered, for 2 minutes.

Place bread on baking trays and spread with tomato paste. Top with onion, capsicum and chicken mixture. Bake for 10–12 minutes or until pizza bases are crisp. Serve topped with baby spinach.
