This easy dinner is full of cool-weather vibes with sweet butternut pumpkin, earthy sprouts, and sage-scented chicken. Everything gets combined and seasoned on the same pan, and it all cooks for the same amount of time at the same temperature.


Brussels sprouts

450 g, halved

Butternut pumpkin

450 g, cut into 4-5cm cubes

Red onion

1 medium, cut into wedges

Skinless chicken breast

4 medium, (800g)

Sage, dried

½ tsp

Ground paprika

½ tsp

Garlic powder or flakes

½ tsp

Oil spray

2 x 3 second spray(s)


  1. Preheat oven to 200°C. Line a large baking tray with baking paper.
  2. Spread Brussels sprouts, pumpkin and onion over prepared tray and lightly spray with oil.
  3. Clear four spaces on the tray for chicken and nestle chicken into the spaces. Lightly spray chicken with oil and sprinkle evenly with sage, paprika, and garlic powder. Season vegetables and chicken with salt and black pepper. Bake for 25 minutes or until chicken is cooked through and the vegetables are tender.
