These chicken patties are so moist and delicious, you won’t be disappointed. There are 5 patties per serve so you won’t be left feeling hungry.

Ingredients

99% fat-free, plain or natural yoghurt, unsweetened

¼ cup(s), (60g)

Light sweet chilli sauce

2 tbs

Zucchini

1 medium, grated

Chicken breast mince

500 g

Garlic

1 clove(s), crushed

Green shallot(s)

4 individual, finely sliced

Fresh lemon rind

1 tsp, finely grated

Fresh chives

2 tbs, finely chopped

Egg(s)

1 medium, lightly beaten

Panko breadcrumbs

20 g

97% fat-free cottage cheese

¼ cup(s), (60g)

Lime(s)

1 medium, wedges, to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. To make sweet chilli ‘mayo’, combine yoghurt and sweet chilli sauce in a small bowl. Set aside.
  2. Place zucchini in a clean tea towel and squeeze out excess liquid. Combine mince, garlic, shallots, rind, chives, egg, breadcrumbs, cottage cheese and zucchini in a large bowl. Season well with salt and pepper. Scoop heaped tablespoons of mixture and shape into 20 patties with wet hands.
  3. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook patties in batches for about 3 minutes on each side until golden and cooked through. Serve with sweet chilli ‘mayo’ and lime wedges.
