Chicken, grape and feta salad
Baby spinach leaves
1 medium, thinly sliced
1 cup(s), (200g) halved
Skinless chicken breast, baked or roasted
2 cup(s), shredded, (320g) shredded
Apple cider vinegar
60 ml, salad dressing,honey variety (¼ cup)
Reduced fat feta cheese
100 g, crumbled
- Boil, steam or microwave broccolini until just tender. Drain. Refresh under cold water and drain. Halve diagonally.
- Combine broccolini, spinach, cucumber, grapes, chicken and dressing in a large bowl. Serve crumbled with feta.
