Chicken crepes with cottage cheese and chives

97% fat-free cottage cheese
1 tbs, chopped
80 g, baby
4 individual, (4x50g), frozen, French-style
Baby spinach leaves
Cooked skinless chicken breast
200 g, shredded
- Combine the cottage cheese and chives in a small bowl. Season with salt and pepper.
- Place the rocket in a large bowl. Season with salt and pepper. Drizzle with the oil and toss to coat.
- Heat crepes following packet instructions. Divide among serving plates. Place the spinach leaves along the centre of each crepe and top with the chicken and the cottage cheese mixture. Fold up the sides of each crepe and roll to enclose filling. Serve with rocket salad.
TIP: To stop the crepes from cracking as you roll them, heat them from frozen instead of letting them thaw to room temperature.
