This filling chicken sandwich takes a mere 10 minutes to prepare. Perfect for a quick lunch.

Ingredients

Turkish bread

180 g, (2 x 9cm-wide pieces, split)

dijon mustard

1 tbs

Skinless chicken breast, grilled or barbecued

200 g, fat trimmed, shredded

avocado

1 large, cut into wedges

cherry tomato

16 individual, halved

reduced-fat 15% cheddar cheese

1 cup(s), grated, grated (120g)

Instructions

  1. Preheat oven grill. Place the bread, cut-side down, on a baking tray and grill for 1-2 minutes or until toasted. Transfer to a clean surface and spread the cut-side with mustard.
  2. Top with the chicken, avocado, tomato and cheese. Grill for 2 minutes or until the cheese is melted.
