Chicken and tzatziki pita pocket
A flavour-packed chicken filling in pocket bread makes a great portable sandwich for lunch on the go.
Cooked skinless chicken breast
100 g, coarsely chopped
½ medium, (Lebanese, finely chopped)
50 g, (halved)
Low fat tzatziki
Wholemeal pita bread
68 g, (1 x small round)
Baby spinach leaves
15 g, (1/2 cup)
- Place the chicken, cucumber, tomato and tzatziki in a medium bowl and stir to combine. Season with salt and freshly ground black pepper.
- Cut a slit through one side of the pita bread to form a pocket. Stuff the spinach leaves and chicken mixture into the pocket. Serve.
SERVING SUGGESTION: Salad made with 1 cup (30g) mixed salad leaves dressed with 2 teaspoons of lemon juice.To make your own low-fat tzatziki, combine low-fat natural yogurt with a little grated, peeled Lebanese cucumber, crushed garlic and dried and/or fresh chopped mint.
