Enjoy the flavours of Mexico which are made even tastier with the sweet mango

Ingredients

Skinless chicken breast, grilled or barbecued

320 g, (buy 1 whole barbecued chicken)

mango

1 medium, thinly sliced

cherry tomato

250 g, halved

avocado

1 medium, coarsely chopped

fresh coriander

¾ cup(s), sprigs

corn tortilla

60 g, (strips)

Instructions

  1. Remove the breasts from the chicken. Remove and discard the skin from chicken breasts. Coarsely shred the chicken breasts.
  2. Place the shredded chicken breast, mango, tomato, avocado, coriander and tortilla strips in a large bowl. Season with salt and pepper. Gently toss to combine.

Notes

TIP: Use remaining chicken in salads and sandwiches.
