Fresh grapes add a surprising sweetness to this quick and easy lunchtime salad.


Ingredients
Garlic
½ clove(s), crushed
Fresh flat-leaf parsley
1 tbs, chopped
Lebanese cucumber
1 medium, cut into ribbons
Green shallot(s)
1 individual, thinly sliced
Grapes
¾ cup(s), red, halved
Iceberg lettuce
1 cup(s), shredded, shredded
Cooked skinless chicken breast
100 g, shredded
Olive oil
1 tsp
Lemon juice
1 tbs
Plain or natural yoghurt, low-fat, no added sugar

Instructions

Layer lettuce, grapes, cucumber, chicken, shallots and parsley in a glass jar or container.

Whisk oil and juice in a small bowl until combined. Season dressing with salt and pepper. Combine yoghurt and garlic in a small bowl . Season with salt and pepper. Drizzle dressing over salad and serve topped with garlic yoghurt.
