An easy and healthy chicken and almond salad with sweet grapes that takes 10 minutes to throw together.

Ingredients

Mixed salad leaves

150 g

Grapes

250 g, red and green mixed, halved

Lebanese cucumber

1 small, sliced

Olive oil

3 tsp

Lemon juice

1½ tbs

Fresh rosemary

1 tbs, (2 sprigs) finely chopped

Garlic

1 clove(s), crushed

Cooked skinless chicken breast

500 g, sliced

Roasted almonds

50 g, unsalted

Instructions

  1. Combine salad leaves, grapes and cucumber in a large bowl.
  2. Whisk oil, lemon juice, rosemary and garlic in a small bowl. Season dressing with salt and pepper.
  3. Drizzle salad with dressing. Add chicken. Toss to combine. Serve sprinkled with almonds.
