Cherry, apple and almond friands

apple and pear puree
reduced fat oil spread
- Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 12-hole (⅓-cup/80ml capacity) muffin tin with oil.
- Sift the flour, baking powder and cinnamon into a large mixing bowl. Stir in almond meal and icing sugar. Whisk egg whites in a medium bowl until just combined. Add apple puree and melted spread to egg whites and stir to combine. Add egg white mixture to flour mixture and stir until just combined (do not over mix). Gently fold in cherries.
- Spoon mixture into prepared muffin holes. Bake for 18–20 minutes or until cooked when tested with a skewer. Stand friands in tin for 5 minutes before turning out onto a wire rack to cool. Serve.
