Cherry and almond overnight oats

Rolled oats, dry
1 small, cored, grated
Unsweetened almond milk
¼ tsp, (3-4 drops)
Cherries, pitted, frozen
250 g, thawed
1 tsp, finely grated
1 tbs, toasted
- Place oats and apple in a large bowl and stir to combine. Add almond milk= and almond extract and stir until combined. Cover and place in fridge to chill overnight.
- Before you’re ready to serve, make the compote. Place cherries and rind in a medium saucepan. Bring to a boil, then reduce heat and simmer for 1-2 minutes or until cherries are softened and just heated through. Drain and discard 1 tablespoon of liquid, then roughly crush cherries with a fork, keeping some whole.
- Divide oat mixture between bowls. Serve topped with cherry compote and flaked almonds.
A dollop of plain unsweetened soy yoghurt will add creaminess.
