Ingredients
Chicken breast mince
400 g
Extra light cheddar cheese
40 g, grated
Ciabatta bread
160 g, 2x8cm wide, halved, split, toasted
Dijon mustard
1 tbs
Mixed salad leaves
40 g
Beetroot, canned in brine, drained
80 g, sliced
Tomato(es)
2 medium, sliced
Pickled gherkin, drained
2 individual, thinly sliced
Extra light cheddar cheese
35 g, thinly sliced
Instructions

Combine the mince and grated cheese in a bowl. Season with salt and freshly ground black pepper.

Shape the mince mixture into four patties. Lightly spray a non-stick frying pan over medium-high heat. Cook the patties for 4-5 minutes each side or until browned and cooked through.

Place the ciabatta pieces on a baking tray. Spread half with the mustard. Top with the mixed leaves, beetroot,tomato, mince patties, gherkin and sliced cheese. Place under a preheated grill for 2-3 minutes or until the cheese melts. Transfer to plates and top with remaining ciabatta pieces.
