Ingredients

99% fat-free plain Greek yoghurt

¼ cup(s), (60g)

Horseradish sauce

3 tsp

Extra light cheddar cheese

50 g, grated

Cauliflower rice (100% cauliflower)

2 cup(s), (240g)

Carrot(s)

½ cup(s), grated, (60g), grated

Egg(s)

2 medium, lightly beaten

Fresh flat-leaf parsley

2 tbs, finely chopped

Fresh chives

2 tbs, finely chopped

Oil spray

2 x 3 second spray(s)

Instructions

  1. Combine yoghurt and horseradish in a small bowl. Season with salt and pepper. Set aside.
  2. Combine cheese, cauliflower rice, carrot, eggs, parsley and chives in a medium bowl. Season with salt and pepper.
  3. Preheat WW Mini Waffle Maker. Lightly spray both Cooking Surfaces with oil.
  4. Spread ¼ cup of the cauliflower mixture onto the bottom Cooking Surface of the WW Mini Waffle Maker. Use the Cover Handle to pull the Cover down and enclose waffle. Cook for 2-3 minutes, until golden brown and cooked through. Using a silicone spatula, transfer waffle to a plate and cover to keep warm. Repeat with remaining cauliflower mixture to make 8 waffles in total, lightly spraying Cooking Surfaces with oil again halfway through. Serve with horseradish yoghurt.
