Cheese and avocado mountain wrap

Snow pea sprouts are delicious raw in sandwiches or salads, tossed in a stir-fry, or added to Asian-style soups. They give an intense burst of snow pea flavour.
50 g, rye (Mountain bread)
Extra light cheddar cheese
¾ cup(s), grated, (90g), grated
½ cup(s), (50g)
1 medium, coarsley grated
- Place bread on a flat surface. Spread avocado onto half of each slice, leaving a 1cm border. Top each with 2 cheese slices and sprinkle with carrot and sprouts. Season to taste with salt and freshly ground black pepper.
- Roll up bread, starting at the side nearest the filling. Serve wraps cut in half.
TIP: To make ahead of time, wrap securely in foil after rolling in Step 2. Refrigerate until lunch time.
