Ingredients

brown onion

1 medium, finely chopped

garlic

zucchini

1 medium, diced

celery

1 tbs, chopped

extra lean beef mince

canned diced tomatoes

dry lasagne sheet

5 individual, small, (80g) each broken roughly into pieces

fresh basil

Instructions

  1. Heat the oil in a large deep ovenproof frying pan over high heat. Cook onion, garlic, carrot, zucchini, celery and thyme, stirring, for 10 minutes or until browned. Add mince and cook, stirring to break up any lumps, for 2 minutes or until mince has browned. Stir in the tomato and 1 ¼ cups (310ml) water. Season with salt and pepper and bring to the boil. Push the pasta pieces into beef mixture, making sure they are covered. Reduce the heat and cook, covered, for 10 minutes. Cook, uncovered, for another 5 minutes or until pasta is tender and sauce has thickened.
  2. Preheat the grill on high. Top with chopped basil and cheese. Place under the grill for 2-3 minutes or until cheese is melted and golden. Serve with the basil leaves.

SERVING SUGGESTION: Salad made from rocket, tomato, and basil. TIP: Already have pasta in the panty? Make this dish with 80g of any other shape of pasta if you don’t have any lasagne sheets on hand.
