Cavallucci (Christmas biscuits)

- Preheat oven to 180°C or 160°C fan-forced. Line 2 baking trays with baking paper. Combine flour, baking powder, coriander, cinnamon, nutmeg and fennel in a large bowl.
- Place xylitol and 100ml water in a small saucepan. Stir over medium heat for 2 minutes or until sweetener has dissolved. Stir in walnuts.
- Pour walnut mixture into flour mixture and stir until a dough forms. Roll tablespoons of dough into 20 balls. Place balls, 5cm apart, on prepared trays and flatten slightly. Bake for 15 minutes or until light golden. Cool on trays before serving.
