Ingredients

Cauliflower

3 cup(s), cut into florets

Brown onion

½ medium, finely chopped

Egg(s)

2 medium, lightly beaten

Barbecue sauce

3 tbs

Pumpkin, cooked without added fat

200 g, or baked, sliced

Cooked skinless chicken breast

240 g

97% fat-free cottage cheese

4 tbs

Fresh sage

1 tbs, torn, to serve

Instructions

  1. Preheat oven to 220°C. Line a baking tray with baking paper.
  2. Process cauliflower in a food processor until fine crumbs form. Transfer to a large bowl. Add onion and egg and stir to combine. Spread cauliflower mixture over prepared tray to form a 5mm-thick round base. Bake for 25–30 minutes or until firm and light golden.
  3. Spoon sauce over pizza base. Top with pumpkin, chicken, sage and cheese. Season with salt and pepper. Bake for 5–10 minutes or until warmed through and cheese is light golden.
