This deliciously cheesy and creamy baked cauliflower dish is a great way to eat more veg. Very more-ish!

Ingredients

Cauliflower

400 g, (about ½ whole), cut into florets

Reduced fat oil spread

1 tbs

Plain flour

1½ tbs

Skim milk

1¼ cup(s), (310ml)

Light tasty cheese

cup(s), grated, grated, (80g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Lightly spray a 1 litre (4 cup) capacity ovenproof dish with oil. Boil, steam or microwave cauliflower until just tender. Drain and transfer to prepared dish.
  2. Meanwhile, melt oil spread in a saucepan over medium heat. Add flour and cook, stirring, for 1 minute. Gradually whisk in milk until smooth and combined. Cook, whisking constantly, until sauce boils and thickens. Remove from heat and stir in half the cheese until melted. Season with salt and pepper.
  3. Pour sauce over cauliflower and sprinkle with remaining cheese. Bake for 20 minutes or until golden. Serve.

Notes

COOK'S TIP: For a herby flavour boost, sprinkle over fresh thyme leaves to serve.
