Caramel pears with cookie crunch ice-cream

Peters Ice Cream, Creamy Vanilla , No Sugar Added
250 ml, (500ml)
reduced fat oil spread
2 large, Corella, unpeeled, cut into thin wedges
- Combine ice-cream and cookies in a medium freezer proof bowl. Freeze for 10 minutes.
- Meanwhile, melt spread in a small non-stick frying pan over medium heat. Add sugar and juice and cook, stirring, for 1 minute or until sugar has dissolved. Bring to the boil. Add pears and cook, covered, turning pears occasionally, for 5–6 minutes or until pears are tender and sauce has slightly thickened.
- Serve pears drizzled with sauce and topped with ice-cream.
