Caramel pears with cookie crunch ice-cream

Pears in this caramel sauce taste heavenly and the homemade ice cookie cream allows for extra crunch.

Ingredients

Macadamia cookie

4 biscuit(s)

Low fat, no added sugar ice cream

250 g

Reduced fat oil spread

2 tsp

Brown sugar

1 tbs

Pear(s)

2 large, Corella, unpeeled, cut into thin wedges

No added sugar orange juice

2 tbs

Instructions

  1. Combine ice-cream and cookies in a medium freezer proof bowl. Freeze for 10 minutes.
  2. Meanwhile, melt spread in a small non-stick frying pan over medium heat. Add sugar and juice and cook, stirring, for 1 minute or until sugar has dissolved. Bring to the boil. Add pears and cook, covered, turning pears occasionally, for 5–6 minutes or until pears are tender and sauce has slightly thickened.
  3. Serve pears drizzled with sauce and topped with ice-cream.
