Capsicum, zucchini and tuna pasta sauce

Mix bright vegetables, salty capers and canned tuna through your favourite pasta for a fast feed that will be ready in less than 20 minutes

Ingredients

olive oil

1 tbs

red capsicum

1 medium, thinly sliced

yellow capsicum

1 medium, thinly sliced

zucchini

1 medium, thinly sliced

garlic

1 clove(s), crushed

baby capers, rinsed, drained

2 tsp

lemon juice

2 tbs

tuna, canned in springwater, drained

165 g, (185g can)

fresh flat-leaf parsley

½ cup(s), chopped

pasta

250 g

Instructions

  1. Heat olive oil in a non-stick frying pan over medium high heat. Add red and yellow capsicum and cook, stirring, for 2 minutes.
  2. Add zucchini and cook, stirring, for 3–4 minutes or until softened. Add garlic, baby capers, lemon juice and tuna.
  3. Cook, stirring, for 2 minutes or until heated through. Remove from heat. Stir in parsley leaves. Serve tossed with pasta cooked following packet instructions or until tender.
