Ingredients

Skinless chicken breast

750 g, fillets

Cajun seasoning

1½ tbs, (see tip)

Light whole egg mayonnaise

cup(s), (100 g)

Lime juice

1 tbs

Garlic

1 clove(s), crushed

Pita bread

6 individual, split

Iceberg lettuce

½ head(s), medium, shredded

Red capsicum

2 medium, sliced

Red onion

1 large, finely chopped

Oil spray

1 x 3 second spray(s)

Instructions

  1. Sprinkle chicken with Cajun seasoning and season with salt and pepper. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook chicken for 5-6 minutes each side or until chicken is cooked through. Transfer to a clean board to cool slightly. Use 2 forks to shred.
  2. Combine mayonnaise, juice and garlic in a bowl. Spread mayonnaise mixture inside each pita pocket. Fill with chicken, lettuce, capsicum and onion.

Notes

Cajun seasoning is a blend of paprika, pepper, cayenne pepper, dried garlic and herbs. It’s ideal as a rub for chicken or fish.
